Hayley’s Power Cookies
1/2 cup mashed banana
3/4 cup natural peanut butter
1/2 cup honey
1 tsp vanilla
1 1/4 cup rolled oats
1/2 cup all-purpose flour (may use whole wheat)
1 tsp ground cinnamon & a couple dashes of allspice
1/4 tsp baking soda
1 handful of raisins

I also added a handful of flax seeds,
chia seeds, sliced almonds and dried cranberries.(The great thing about this cookie is that you can almost add any of your favorites to it! you could try yogurt chips or walnuts or dark chocolate for some more sweet).
Preheat oven to 350º. Line baking sheets with parchment paper or a silicone mat (or coat with cooking spray) and set aside.
Place the mashed banana, peanut butter, honey and vanilla in a large bowl and whisk to combine. Also add to this bowl the raisins, cranberries, both kinds of seeds and almonds. In another bowl whisk together the oats, flour, cinnamon and baking soda. Gently stir the dry ingredients into the peanut butter banana mixture ½ at a time, stirring just until combined after each half.
Using a spoon, drop about 2 Tbsp. of dough at a time onto the prepared baking sheet. Flatten slightly with a spoon to about 1/2 of an inch thick.
Bake one sheet at a time until lightly browned or about 12 minutes. Transfer to a wire rack to cool and store in an airtight container for up to 4 days.
I need to mention that I can't take credit for these cookies. I found the recipe on Pinterest labeled as Breakfast cookies and just modified them by adding all the goodies and a little more oats than originally intended. If you'd like the source let me know and I'll send you the link.
